My local spirits shop has a 1995 Craigellachie 21yo Douglas Laing single sherry cask bottling that looks to be superb. I’ve not had the standard range, so I’m wondering how a sherry matured cask might match up to the official bottling. Thoughts? Apple blossom and Asian pear on the nose, with a tannic, oaky astringency on the palate which again hints of sherry, but sweeter. Cream sherry, perhaps? Kate – Nose gets oakier as it sits in the glass, and the cereal notes fade. The mouthfeel is not oily; much more astringent than I expected! Spicy, oaky, watered down apple flavours, charred barrel, iodine with a hint of minerals. Peppery, apple, and more apple, creamed honey. Medium-long finish. If any provision of these Terms is held invalid, the remainder of the Terms shall continue in full force and effect.
