Description

Prepare the batter as before and leave to rest in a warm place. When the batter has doubled in volume, lightly butter then place the crumpet rings in a heavy-based pan or on a flat griddle, as above. Step 1 In a large bowl mix the flours, sugar, yeast, baking powder and 1/2tsp fine salt to combine. Whisk in 400ml just-warm water to make a smooth batter. Cover and set aside for 30min, or until the there are lots of little bubbles on the surface. Divide two-thirds of the batter among them. Spoon a tablespoon of mincemeat on top of the batter in each crumpet ring then add the remaining batter to each – a sort of mincemeat sandwich. Keeping the heat low, cook the crumpets for about 10 minutes, till they are golden and lightly crisp on the base. Run a knife around the inside of the rings to separate each crumpet from its ring. In a small bowl, beat together the softened butter with the cinnamon and the brown sugar. Cut a square of brown parchment paper and spoon the cinnamon butter into the centre. a tea towel to protect your fingers, then flip the crumpets with a palette knife and cook for 2 minutes more. Set aside on a baking sheet. Re-grease the crumpet rings and repeat with remaining mixture. For the whipped honey butter: Put the butter in a bowl and beat with an electric hand mixer or wooden spoon until soft and pliable. Stir through the honey, and beat until almost completely combined – don’t beat for too long or the butter will split. Cover with cling film and store somewhere cool until needed.
