This homemade blueberry poptart recipe is one of my absolute favorite things to make if you are in the mood for a baking project, or if you just want to have homemade poptarts on the weekend. If it feels too crumbly, dip your fingers in water and then continue bringing the dough together with your hands.

In case you haven’t noticed I’m obsessed with making homemade pop tarts so I decided to give my very first pop tart recipe new life with a few updates in the ingredient list and fresh photos. We’re here to dare to be different, to create happy homes like we all craved when we dreamed of growing up with a family of our own. KID-FRIENDLY: Kids obviously love eating these, but they can also give a helping hand in the kitchen making them. Cut your butter into cubes and them to the flour mixture and then pulse until the butter is in small chunks and evenly distributed. Pour in the 1/4 cup of water and let the mixture sit, stirring occasionally, until the blueberries thaw, about 2-3 minutes. Cut your butter into the flour using a pastry cutter (this is the one I use) – it makes this step an absolute BREEZE, add water, use your hands to help it along and form it into two discs.

They're great straight out of the box, but even better toasted to warm and gooey perfection in a toaster or microwave oven. Bake the pop tarts on a lined baking sheet so that they don’t stick, and if some of the filling does escape it will be easy to clean up. IMPORTANT NOTE: The glaze will not harden the same as traditional icing, so only glaze the poptarts when you are ready to eat! I’m all about being able to customize recipes exactly the way you like them so here’s a few ideas to change up these pop tarts and make them just how you like.
