I use this seasoning to marinate meats/fish to grill and in my Bean Stew, Jollof Rice, Potato Hot Pot, Poulet DG and much more. It may not be reproduced in any way whatsoever without the prior consent of FairEssentials Limited (for Windrush Bay) nor without due acknowledgement. I've noticed that, after I've made the seasoning and refrigerated it for some days, there is a liquid layer on top. it’s a good bet that the green and gooey stuff in the bottles below is being employed to add just the right amount of island spice and flavor. Green seasoning is used many different ways in Caribbean cooking, though its magical talents as a marinade are what draw most people to it.

Note: Add handfuls of the ingredients at a time and make sure the blender's cover is tightly secured. Croix changing the way people think about travels to the Caribbean by putting authentic aspects of island life and the region's unique cultural heritage in the spotlight ahead of the glitzy, one-size fits all tourist trap image popularized over the years.

Place the green seasoning in a jar with a tight-fitting lid and keep in the fridge to save for up to two weeks. As soon as I get back to Trini I would like to make this but wondering if the chadon beni might overpower? Also, simmer some of the sauce with some salt and pepper then serve on the side of grilled meat or fish. Our version of green seasoning is most likely of a Spanish influence (I find it very similar to Puerto Rican Recaito) and shared with the other ethnicities on the island where it took on a life of it's own. For the outside grill: place on the grill and cook for 40 minutes rotating every 15 minutes (and basting with the leftover marinade) until the chicken reaches an internal temperature of 165 degrees Fahrenheit (75 degrees Celsius). Cilantro’s flavor is like a mild version of culantro and both herbs can be used interchangeably for this recipe.
