About this deal

In short roti is a round flatbread that is made from stoneground wholewheat flour (atta), oil (this is optional) and water. This is one of the main differences between chapati and naan, which is leavened - more about this below. However, eating starchy foods daily with gum in it is not good for health, which I learnt myself after eating it for a year. The first thing I experimented was this roti flour blend after going gluten free as roti is important element of our meals.

Which means the Caribbean roti is leavened (meaning rising agents are used) whereas this isn't used in the Indian version. First of all, chapati is unleavened and flat, whereas naan uses yeast which makes it grow thicker and form bubbles. They were tricky to get from rolling surface to pan (I ended up rolling long narrow ones the same size and shape as my spatula…) but cooked up beautifully.It may not be reproduced in any way whatsoever without Ocado Limited's prior consent, nor without due acknowledgement. I personally rather like them as a flatbread filled with grated cheese and avocado, and of course, with any curry. To add some extra flavor to your chapatis, try adding some herbs or spices to the dough before rolling it out. Use the pan lid like a cookie cutter, pressing it directly into the roti to cut the jagged edges off. Our chapati recipe above is gluten-free instead, as we swapped the wheat flour with a mix of gram flour (chickpea or garbanzo flour), fine cornmeal, and arrowroot starch.Since the dough will be very hot, knead the mixture using the base of a small bowl or with a flexible spatula until cool enough to handle. Crispy dosas with potato masala, flavorful coconut chutney, and tangy sambar… I’m describing pure gustatory joy! Alternatively, you can use a pair of tongs to transfer the roti to an open flame (topped with a metal grate if required).

Take one portion of dough at a time and knead once more (for about a minute) before you begin to roll. Go slow, this is not your regular wheat flour so it will require a little practice but if you have kneaded the dough for a good amount of time then the chapati won’t break.
