On this World Book Day, I want to share a very special recipe with you. It’s the Chocolate Mango Cake from my book, Desserts for Every Mood. It’s officially the season of mangoes and this pairing of chocolate with mango is a marriage made in heaven. Dark notes of chocolate with the sweet, citrus flavors of mango take this dessert to a whole new level. This cake is special for any celebration, or for a simple night-in with family. All you need is a red and white stripy top and some glasses but if you don't have those items you could always create your own by drawing red stripes on to an old white t-shirt with a felt tip and use facepaint or an eyeliner to draw the glasses on. Chocolate sponge– This is by far the easiest and the best chocolate sponges I have ever made in my life. It’s chocolatey, dark and most importantly, EGGLESS! I know that so many of you ask me for eggless recipes and this is just one of those cakes that you have to make in your kitchens. Since this is an eggless cake, I use yogurt as a substitute for eggs. Yogurt is a great alternative and one of the most common ingredients used as a substitute for eggs. It gives the cake a very similar texture and makes it fluffy and light.
