As I said, I had been wanting to make papadums from scratch. Partly, it was out of curiosity, but also because they were quite hard to find (and expensive) here in Spain. After some research, I learned they were made from “urid flour” (aka. urad flour) but couldn’t find either urad flour or “urid lentils” anywhere here in Spain. I gave up on the idea for a while until…. Mark always uses these rice noodles – he says they’re so much better than vermicelli.
