Given that many single malt scotch whiskies must be laid down years in advance before they can be sold, and whisky rides the rollercoaster of being fashionable or last week’s news as much as any luxury commodity, many distilleries hedge their bets. Lagavulin distillery is a malt whisky distillery in the village of Lagavulin on the south of the island of Islay, Scotland. [1] It distills spirit that will become Islay single malt Scotch whisky.

Caramel and peat arrive at the scene first and threaten to take over but stop just short of domination. Orange zest, smoked meat, iodine, brine and some crisp red apples orbit the dense caramel and peat core. Overall there is a slight medicinal / novocain quality to the whole aroma that is more intriguing than it is off putting. Peat and smoke with hints of vanilla, sea salt and citrus sweetness. It was founded in 1816, and eventually made its way into the Diageo portfolio, where it’s one of the six whiskies to make up the Classic Malts of Scotland series. All of Lagavulin’s distillate is made with heavily peat-smoked malt, giving its products that signature reek and pronounced maritime character that leads many to point to it as the canonical Islay whisky. In addition to the use of peat-smoked barley from the nearby Port Ellen Maltings, the distillers at Lagavulin credit relatively long fermentation times (at least 55 hours) and a slow secondary distillation process as key aspects to developing Lagavulin’s unique flavor. It has gained popularity among whisky connoisseurs who prefer a more intense flavour experience. Due to the extended ageing, this whisky contains higher levels of phenols, giving Caol Ila 12 more body and flavour compared to its younger siblings, without overpowering the delicate flavours produced during the distillation process.

The peat smoke of Lagavulin 16 is reminiscent of a campfire and intimidatingly smoky on the nose its certainly not for the faint-hearted. The use of ageing in charred oak casks will have definitely contributed to the peat to supercharge the smoky aroma. In terms of affordability these two top-shelf Scotch whiskies are comparable; however their flavour profiles couldn’t be more different from one another. With both choices being wonderfully complex and well balanced – it all comes down to personal preference as to which you would prefer in your glass! In terms of flavour, Lagavulin 16 could be compared to Laphroaig 10. Both are Islay whiskies with a robust peaty character. But, Lagavulin 16 tends to be less medicinal and a tad sweeter, with a more sophisticated balance of flavours.Lagavulin fills their stills to 95% capacity, whereas Caol Ila only fills them to 50-60%, which makes a huge difference in the final product. The charring process also helps to remove unwanted tannins from the wood, creating a smoother and more mellow whisky than other maturation processes that use untorched oak. Over time, the intense smokiness present in Lagavulin 16 will slowly mellow out, making it an incredibly complex whisky that has notes of iodine, sweet spices, mature Sherry, creamy vanilla and peat smoke.
