A stout beer tends to often have a similar flavor profile, albeit on the darker end of the spectrum, showing things like a coffee bean, licorice, dark chocolate, and more. It could have easily been an over-the-top affair, aged too long in stout barrels and thus burying the nuance of the whiskey. Finish: Again familiar, but different, that different complexion of spice with chocolate from the nose lingers briefly. If It was still just Cooley, Bushmills and Midleton (Jameson) on the island I don’t think the Jameson Caskmates Stout Finish would have ever materialized, and that would have been a sad sad thing because it’ss quite tasty.Outside of the obvious, which is that it is not made in the United States, Irish whiskey has several differences. We’re talking about Jameson’s Caskmates family of whiskies, which includes a stout version and an IPA version (not to be confused with India Pale Ale, we’re talking Irish Pale Ale here). This particular bottle is wrapped in a darker black background label (as opposed to the bright yellowed version on the standard edition) that bears the name and arms of Jameson.

When a local craft brewer borrowed our casks to age their fine Irish stout it gave us an idea: why not finish our own precious whiskey in the stout beer seasoned oak barrels?
